Step preview

  1. Attach Dough Hook
  2. Add milk, quick-rise yeast, all purpose flour, sugar, egg, crème fraîche, orange blossom water, vanilla extract and salt to the Kenwood Bowl
  3. Knead with splashguard fitted - 5 min, Speed 1
  4. Then add butter to the Kenwood Bowl
  5. Knead with splashguard fitted until elastic - 5 min, Speed 1
  6. Remove the bowl from the machine
  7. Cover with plastic wrap
  8. Chill in fridge - 1 hr
  9. Transfer dough to lightly floured surface
  10. Fold the dough in 2 several times
  11. Transfer dough to Kenwood Bowl
  12. Cover with plastic wrap
  13. Prove - 3 hr
  14. Transfer dough to lightly floured surface
  15. Divide into 2 equal pieces
  16. Roll out into logs
  17. Cover with kitchen towel
  18. Prove - 2 hr
  19. Pre-heat oven - 180°C
  20. Transfer shaped dough to baking tray
  21. Brush with milk
  22. Cut the brioches with a sharp knife along their length
  23. Bake - 35 min, 160°C
  24. Let cool onto cooling rack
  25. Serve
