Step preview

  1. Pre-heat oven - 170°C
  2. Grease and line 2 clean round pans with parchment paper
  3. Attach K Beater
  4. Add all purpose flour, baking powder, caster sugar, unsalted butter, egg and milk to the Kenwood bowl
  5. Mix with splashguard fitted until combined - 2 min, Speed Max
  6. Then add blackberries to the Kenwood bowl
  7. Mix with splashguard fitted until combined - 30 sec, Speed Max
  8. Spoon batter into 2 round pans evenly
  9. Bake until skewer tests clean - 30 min, 170°C
  10. Turn out onto cooling rack and let cool
  11. Clean Kenwood Bowl
  12. Attach Whisk
  13. Add whipping cream to the Kenwood bowl
  14. Mix with splashguard fitted until soft peaks form - 1 min 30 sec, Speed Max
  15. Transfer cream to medium bowl
  16. Place half of cake on serving plate
  17. Transfer half of cream to cake
  18. Top with blackberry jam
  19. Layer the other cake on top
  20. Add the rest of cream to cake
  21. Top with blackberry jam
  22. Swirl the jam through the cream
  23. Serve
