This fruity frozen dessert is great in the summertime but can be made all through the year as the raspberries in this recipe are frozen.

Step preview

  1. Attach the Creaming Beater
  2. Add frozen raspberries, lemon, lemon juice and sugar to the Cooking Chef XL Bowl
  3. Lift the Cooking Chef head and fit the heat shield
  4. Cook with splashguard fitted - 10 min, 110°C, Stir 3
  5. Strain mixture into medium bowl through a sieve then set aside
  6. Clean Cooking Chef bowl
  7. Attach the Whisk
  8. Add caster sugar and egg yolk to the Cooking Chef XL Bowl
  9. Whisk with splashguard fitted until light and fluffy - 3 min, Speed Max
  10. Then add caster sugar, whole milk, whipping cream and vanilla extract to the Cooking Chef XL Bowl
  11. Attach the Creaming Beater
  12. Cook until sugar has dissolved - 5 min, 105°C, Stir 1
  13. Cook until thickened - 5 min, 100°C, Stir 1
  14. Strain content of Cooking Chef XL Bowl into large mixing bowl through a sieve
  15. Stir salt into the large mixing bowl
  16. Place in fridge for at least 6 hours or overnight
  17. Once chilled remove from the fridge
  18. Add compote into the vanilla base and mix until combined
  19. Transfer content of large mixing bowl to plastic container
  20. Place in freezer - 1 hr
  21. Remove from the freezer, manually whisk the mixture and place back in the freezer
  22. Repeat the process every 30 Minutes for 3 hours or until the mixture is set
  23. Repeat - 30 min
  24. Serve
