Step preview

  1. Attach the Creaming Beater
  2. Add egg yolk and caster sugar to the Cooking Chef XL Bowl
  3. Lift the Cooking Chef head and fit the heat shield
  4. Mix with splashguard fitted - 2 min, Speed Max
  5. Then add whole milk and vanilla bean to the Cooking Chef XL Bowl
  6. Mix with splashguard fitted until smooth - 10 min, 85°C, Speed 1
  7. Transfer content of Cooking Chef XL Bowl to medium bowl
  8. Chill in fridge
  9. Clean Cooking Chef bowl
  10. Attach the Whisk
  11. Add egg white, sugar and salt to the Cooking Chef XL Bowl
  12. Whisk with splashguard fitted - 70°C, Speed Max
  13. Whisk with splashguard fitted - 6 min, Speed Max
  14. Assemble the floating islands
  15. Retrieve the custard from the fridge
  16. Pour a little custard into the serving bowls
  17. Scoop some of the whisked egg white with a ladle and place on the custard, in the middle of the serving bowls
  18. Garnish with pink pralines, flaked almonds, caramel or cocoa nibs
  19. Serve
