Step preview

  1. Grease and line a clean baking tray with parchment paper
  2. Attach Dough Hook
  3. Add all purpose flour, dried yeast, sugar, lard and salt to the Kenwood Bowl
  4. Mix until combined - 30 sec, Speed Min
  5. Add milk to the Kenwood Bowl gradually while machine is running
  6. Mix until dough forms - 6 min, Speed Min
  7. Cover with kitchen towel
  8. Prove - 1 hr
  9. Transfer dough to lightly floured surface
  10. Shape into a ball
  11. Cover with kitchen towel - 10 min
  12. Divide into 8 equal pieces
  13. Roll into a log
  14. Form the log into a ‘U’ shape
  15. Cross the open ends over each other to form a twist
  16. Bring the twisted end down over the bottom of the ‘U’ shape
  17. Press to seal to make a pretzel shape
  18. Transfer pretzels to baking tray
  19. Cover with kitchen towel
  20. Prove - 30 min
  21. Pre-heat oven - 220°C
  22. Add water and salt to a clean small bowl then set aside
  23. Add water and baking soda to a clean large saucepan
  24. Heat until boiling - medium-high heat
  25. Dip pretzels into boiling water one by one
  26. Drain
  27. Place pretzels on baking tray
  28. Brush the pretzels with salty water mixture
  29. Bake until crispy - 10 min, 220°C
  30. Remove from oven and let cool
  31. Clean Kenwood Bowl
  32. Attach Whisk
  33. Add greek yogurt and icing sugar to the Kenwood Bowl
  34. Mix until combined - 2 min, Speed 4
  35. Transfer content of Kenwood Bowl to medium bowl then set aside
  36. Add milk chocolate and coconut oil to a clean heatproof bowl
  37. Microwave in microwave until melted then set aside
  38. Add white chocolate and coconut oil to a clean heatproof bowl
  39. Microwave in microwave until melted then set aside
  40. Retrieve the medium bowl containing the yogurt mixture
  41. Dip four pretzels into the yogurt mixture
  42. Dip the rest pretzels into the melted milk chocolate
  43. Place pretzels on serving plate
  44. Drizzle the yogurt dipped pretzels with the remaining melted milk chocolate
  45. Sprinkle with freeze-dried raspberries
  46. Drizzle the melted white chocolate over the milk chocolate dipped pretzels
  47. Sprinkle with hazelnuts
  48. Leave until set
  49. Serve
