Ideal for savoury or sweet preparations, personally I used it as a base for galette des rois. This recipe will give you 300g of quick puff pastry. For best results, use mineral water. To make a galette des rois, I made 2 loads of puff pastry rolled to a diameter of 25cm and a thickness of 3mm. Cook for 40 minutes at 180°C. User generated recipes have not been tested by Kenwood.

Step preview

  1. Attach the K-Beater
  2. Add italian 00 flour, butter, caster sugar and salt to the Cooking Chef XL Bowl
  3. Lift the Cooking Chef head and fit the heat shield
  4. Mix with splashguard fitted - approx 1 min 30 sec, Speed 2
  5. Then add water to the Cooking Chef XL Bowl
  6. Mix with splashguard fitted - 1 min 50 sec, Speed 2
  7. Don't try to incorporate the butter completely in the dough, there should be some visible pieces left, this is what will allow the puff pastry to develop during baking
  8. Transfer dough to lightly floured surface
  9. Shape into a ball
  10. Wrap with plastic wrap
  11. Chill in fridge - 1 hr
  12. Making the puff pastry:
  13. Get the chilled pastry out of the fridge
  14. Roll into a rectangle
  15. Fold the top third of the pastry length over the middle third
  16. Fold the bottom third over the middle third
  17. Turn the dough a quarter turn to the right
  18. You have just made a single turn
  19. Repeat this process four more times
  20. Your quick puff pastry is ready to use
