A quick courgette brownie made using the Food processor attachment, which uses the knife blade to puree the courgette into the batter. Great for using up a leftover courgette.

Step preview

  1. Pre-heat oven - 170°C
  2. Grease and line a clean square pan with parchment paper
  3. Assemble the Food Processor attachment to the machine
  4. Fit the knife blade to the machine
  5. Add zucchini, unsalted butter, caster sugar, egg and vanilla extract to the Food processor attachment
  6. Attach the lid and ensure it is locked into place
  7. Pulse until smooth
  8. Add all purpose flour, cocoa powder, baking powder, coffee powder and salt to the Food processor attachment
  9. Mix until just combined
  10. Remove the attachment from the machine
  11. Remove the knife blade
  12. Add dark chocolate chips to the Food processor attachment
  13. Stir until just combined
  14. Transfer batter to square pan
  15. Bake - 25 min, 170°C
  16. Remove from oven and let cool
  17. Add milk to a clean saucepan
  18. Heat until hot - medium-low heat
  19. Transfer content of saucepan to medium bowl
  20. Add dark chocolate chips to the medium bowl
  21. Stir until melted
  22. Add icing sugar and honey to the medium bowl
  23. Stir until combined
  24. Chill in fridge until set
  25. Remove the chilled chocolate mixture from the fridge
  26. Spread cake with chocolate
  27. Cut into 12 equal pieces
  28. Serve
