When you're serving up your next bowl of piping hot ramen, make sure you have a jar of these at the ready! A traditional topping found in most ramen-yas (ramen shops) across Japan, these earthy pickled mushrooms can also be used to jazz up fried rice, soup or even pizza. Make sure your jars are sterilised by running them through a dishwasher or rinsing them with boiling water and drying in the oven in low heat.

Step preview

  1. Add dried shiitake mushrooms and water to a clean medium bowl
  2. Leave - 15 min
  3. Drain the mushrooms in the medium bowl
  4. Transfer mushrooms to cutting board
  5. Slice thinly
  6. Divide mushrooms between 2 jars
  7. Attach the Stir Tool
  8. Add rice wine vinegar, water, soy sauce, ginger and garlic clove to the Cooking Chef XL Bowl
  9. Lift the Cooking Chef head and fit the heat shield
  10. Cook with splashguard fitted until fragrant - 3 min, 110°C, Stir 1
  11. Pour content of Cooking Chef XL Bowl into 2 jars
  12. Let cool - 1 hr
