An essential ingredient in New Orleans muffaletta and many Italian American sandwiches, giardiniera is a great relish to always have in the fridge. Use it to add brightness to salads, pasta, antipasti boards, burgers and more! While the pickle will be ready after overnight refrigeration, the flavour will be best after 2-3 days. This recipe makes enough for one 1000 ml jar. Make sure your jar is sterilised by running it through a dishwasher or rinsing it with boiling water and drying it at a very low temperature in the oven.

Step preview

  1. Add cauliflower, celery stalk, red bell pepper, green beans, carrot and sea salt to a clean colander
  2. Set over a sink and mix well
  3. Leave - 1 hr
  4. Rinse vegetables with water and shake away any excess liquid
  5. Transfer content of colander to jar
  6. Attach the Stir Tool
  7. Add red chili, garlic clove, fennel seeds, mustard seeds, coriander seeds, black peppercorns, chili flakes, dried oregano, bay leaves, water, white wine vinegar, salt and sugar to the Cooking Chef XL Bowl
  8. Lift the Cooking Chef head and fit the heat shield
  9. Heat with splashguard fitted until dissolved - 4 min, 110°C, Stir 2
  10. Transfer content of Cooking Chef XL Bowl to jar
  11. Leave until cool - 1 hr
  12. Screw on lid and refrigerate overnight
  13. Serve
