Sharp and hot, wasabi is added to the pickling liquid to create a spicy and refreshing Japanese-style condiment. Add in small doses to ramen bowls, hotpots, yakitori, or sushi. Once all the ginger has been used up, the leftover brine can be used to pep-up a salad dressing or even in a cocktail! Make sure your jar is sterilised by running through a dishwasher or rinsing with boiling water and drying in a very low oven.

Step preview

  1. Add ginger to a clean jar
  2. Attach the Stir Tool
  3. Add wasabi, rice vinegar, water, salt and sugar to the Cooking Chef XL Bowl

  5. Heat with splashguard fitted until dissolved - 3 min, 110°C, Stir 2
  6. Pour content of Cooking Chef XL Bowl into jar
  7. Leave until cool - 1 hr
  8. Refrigerate overnight
  9. Serve
