Sharp and hot, wasabi is added to the pickling liquid to create a spicy and refreshing Japanese-style condiment. Add in small doses to ramen bowls, hotpots, yakitori, or sushi. Once all the ginger has been used up, the leftover brine can be used to pep-up a salad dressing or even in a cocktail! Make sure your jar is sterilised by running through a dishwasher or rinsing with boiling water and drying in a very low oven.
