Step preview

  1. Making the macarons:
  2. Attach the Whisk
  3. Add egg white to the Cooking Chef XL Bowl
  4. Lift the Cooking Chef head and fit the heat shield
  5. Whisk with splashguard fitted until frothy - 2 min, Speed Max
  6. Add caster sugar to the Cooking Chef XL Bowl bit by bit while machine is running
  7. Whisk with splashguard fitted until glossy - 3 min, Speed Max
  8. Then sift ground almonds, icing sugar and cocoa powder into the Cooking Chef XL Bowl
  9. Attach the Creaming Beater
  10. Mix with splashguard fitted until well combined - 1 min, Speed Min
  11. Prepare a clean piping bag with plain round tip
  12. Transfer mixture to piping bag
  13. Pipe on baking trays lined with greaseproof paper
  14. Set aside - 30 min
  15. Bake - 20 min, 140°C
  16. Leave to cool and then gently peel them off
  17. Making the chocolate ganache:
  18. Clean Cooking Chef bowl
  19. Attach the Creaming Beater
  20. Add dark chocolate and butter to the Cooking Chef XL Bowl and continue
  21. Add whipping cream to a clean saucepan
  22. Heat until boiling and turn off heat - medium-high heat
  23. Pour cream into Cooking Chef XL Bowl carefully
  24. Mix - 2 min, Speed 1
  25. Mix - 1 min, Speed 2
  26. Transfer content of Cooking Chef XL Bowl to medium bowl
  27. Let cool and continue - approx 2 hr
  28. Making the vanilla ganache:
  29. Clean Cooking Chef bowl
  30. Attach the Creaming Beater
  31. Add white chocolate to the Cooking Chef XL Bowl and continue
  32. Add whipping cream and vanilla bean pod to a clean saucepan
  33. Heat until boiling and turn off heat - medium-high heat
  34. Add silver leaf gelatin sheet to the saucepan
  35. Mix thoroughly until combined
  36. Pour cream into Cooking Chef XL Bowl carefully
  37. Mix until well combined - 2 min, Speed 1
  38. Add whipping cream to the Cooking Chef XL Bowl gradually while machine is running
  39. Mix until well combined - 2 min, Speed 1
  40. Let cool - approx 4 hr
  41. Place the vanilla ganache into the Cooking Chef XL Bowl
  42. Attach the Whisk
  43. Whisk with splashguard fitted - 30 sec, Speed 3
  44. Whisk with splashguard fitted until thickened - 30 sec, Speed Max
  45. You can then put it in a piping bag and pipe it between two macaron shells
  46. Serve
