Miso has been a staple ingredient in Japan for hundreds of years and provides plenty of health benefits, including providing your gut with good bacteria that develop during the fermentation process. Miso soup uses white, or awase, miso which is sweet and nutty, added to a dashi stock and simmered with soft tofu and green cabbage. You can substitute the dashi for vegetable stock to make this dish vegetarian and vegan friendly.
