Miso has been a staple ingredient in Japan for hundreds of years and provides plenty of health benefits, including providing your gut with good bacteria that develop during the fermentation process. Miso soup uses white, or awase, miso which is sweet and nutty, added to a dashi stock and simmered with soft tofu and green cabbage. You can substitute the dashi for vegetable stock to make this dish vegetarian and vegan friendly.

Step preview

  1. Add white miso and dashi to a clean small bowl
  2. Stir until combined then set aside
  3. Attach the Stir Tool
  4. Add dashi to the Cooking Chef XL Bowl
  5. Lift the Cooking Chef head and fit the heat shield
  6. Cook with splashguard fitted - 3 min, 100°C, Speed OFF
  7. Then add green cabbage to the Cooking Chef XL Bowl
  8. Cook with splashguard fitted until softened - 5 min, 98°C, Stir 3
  9. Then add tofu to the Cooking Chef XL Bowl
  10. Cook with splashguard fitted - 1 min, 105°C, Stir 3
  11. Transfer content of small bowl to Cooking Chef XL Bowl
  12. Mix with splashguard fitted until combined - 2 min, Stir 1
  13. Then top with green onion
  14. Serve
