This recipe is inspired by the trippa alla fiorentina traditional recipe: Florentine-style tripes. For the onion, the red tropea onions are fine, but if you don't have any, you can use any other kind. You can replace the peeled tomatoes with chopped tomato pulp or passata, but for best results, the tinned tomatoes should be crushed with a fork. For the grated cheese, grana padano is fine for a milder flavour, pecorino for a stronger flavour. User-generated recipes have not been retested by Kenwood.

  12. Then add tripe to the kCook bowl
  13. Cook with filler cap removed - 10 min, 100°C, speed 2
  14. Then add dry white wine to the kCook bowl
  15. Cook with filler cap removed - 2 min, 110°C, speed 4
  16. Cook with filler cap removed - 3 min, 110°C, speed 1
  17. Then add whole peeled tomatoes and salt & pepper to the kCook bowl
  18. Cook with filler cap removed - 2 hr, 94°C, speed 1
  19. Serve
  20. Garnish with Grana Padano cheese and paprika
