This is a luxury mincemeat recipe to fill your homemade mince pies at Christmas time. If you are going to go to the trouble of making your own pastry, then it is worth going the extra mile and making this luxurious filling filled with lots of dried fruit and a good quality brandy or rum. It is best to prepare it a few weeks ahead to allow the flavours to develop. Store the mixture in a large, sterilized jar until ready to use.
