A very traditional Middle Eastern filled biscuit, this maamoul recipe will give you the easiest rendition of maamoul with a spiced date filling. The pastry is made with a combination of fine semolina and plain flour. Sometimes pistachios or walnuts are used as a filling. Some recipes include Mahleb, a Middle Eastern spice, made from cherry stones that is commonly used in Middle Eastern breads, cakes and biscuits. Orange blossom water or rose water may also be added. Usually, maamoul is prepared in ornate moulds that you can get in different patterns. Maamoul is commonly served during Eid Al Fitr (a Muslim celebration that follows Ramadan, the month of fasting and Eid Al Adh, the celebration that follows Hajj, a Muslim pilgrimage). Maamoul is also served during Easter in the Middle East.

Step preview

  1. Add unsalted butter and milk to a clean saucepan
  2. Heat until simmering - medium-high heat
  3. Remove from the heat and set aside
  4. Attach K Beater
  5. Add all purpose flour, fine semolina flour and caster sugar to the Kenwood Bowl
  6. Mix with splashguard fitted until combined - 10 sec, Speed 1
  7. Pour milk mixture into Kenwood Bowl gradually while machine is running
  8. Mix with splashguard fitted then scrape bowl - 2 min, Speed 1
  9. Mix with splashguard fitted - 1 min, Speed 1
  10. Transfer dough to work surface
  11. Knead until smooth
  12. Transfer dough to Kenwood Bowl
  13. Cover with kitchen towel
  14. Let rest - 3 hr
  15. Line a clean baking tray with parchment paper
  16. Lightly flour the moulds
  17. Assemble the Food Processor attachment to the machine
  18. Fit the Knife Blade to the machine
  19. Add dates, vegetable oil and ground cinnamon to the Food processor attachment
  20. Attach the lid and ensure it is locked into place
  21. Mix until smooth
  22. Transfer mixture to small bowl
  23. Shape into balls
  24. Place balls on baking tray then set aside
  25. Pre-heat oven - 180°C
  26. Transfer dough to lightly floured surface
  27. Knead until soft - approx 5 min
  28. Shape into balls
  29. Flatten into a circle
  30. Hold it in the centre of your palm and press it into a cup shape
  31. Place a ball of the date mixture inside the cup
  32. Bring the edges of the dough over the filling
  33. Press the seams to seal
  34. Roll into balls
  35. Place the dough balls into the prepared moulds
  36. Once shaped, tap them out onto a work surface
  37. Place cookies on baking tray
  38. Bake until golden brown - 20 min, 180°C
  39. Remove from oven
  40. Turn out onto cooling rack until completely cool
  41. Serve
