This soft brioche dough is filled with smooth chestnut paste and chopped hazelnuts for an added crunch and for even more indulgence topped with a sticky caramel maple sauce. If you don't have the food processor attachment you can buy chestnut paste ready-made.

Step preview

  1. Attach Creaming beater
  2. Add unsalted butter to the EasyWarm Bowl
  3. Heat with splashguard fitted - 1 min, 9, Stir 2
  4. Then add light brown sugar, water, nutmeg and vanilla extract to the EasyWarm Bowl
  5. Heat with splashguard fitted - 5 min, 9, Speed Min
  6. Stir with splashguard fitted - 2 min, Speed Min
  7. Then add maple syrup, whipping cream and salt to the EasyWarm Bowl
  8. Stir with splashguard fitted - 3 min, Speed 1
  9. Pour mixture into baking dish then set aside
  10. Clean EasyWarm Bowl
  11. Attach Dough Tool
  12. Add active dried yeast and milk to the EasyWarm Bowl
  13. Prove - 5 min
  14. Add bread flour, salt, caster sugar, unsalted butter and egg to the EasyWarm Bowl
  15. Mix with splashguard fitted - 10 min, Speed 1
  16. Remove Dough Tool
  17. Prove with splashguard fitted - 1 hr, 2
  18. Transfer dough to lightly floured surface
  19. Roll out into a rectangle
  20. Spread with chestnut paste
  21. Sprinkle with hazelnuts
  22. Roll into a log
  23. Cut into pieces
  24. Transfer shaped dough to baking dish
  25. Cover with kitchen towel
  26. Let rest - 30 min
  27. Pre-heat oven - 180°C
  28. Retrieve the baking dish
  29. Bake - 35 min, 180°C
  30. Remove from oven
  31. Let cool slightly
  32. Serve
