Stewed tripe with vegetables and mint. Good Italian cuisine boasts numerous dishes such as Stewed Tripe (Trippa in umido). With its intense aroma, thanks to the pecorino cheese and mint, it is a gourmet dish. User generated recipes have not been re-tested by Kenwood.

Step preview

  1. Fit max blade to kCook bowl
  2. Add extra virgin olive oil, carrot, celery root, onion and garlic clove to the kCook bowl

  5. Blend with filler cap fitted - 5 sec, speed 12
  6. Remove the Blade Tool
  7. Add bacon to the kCook bowl
  8. Fit stir tool to kCook bowl
  9. Cook with filler cap fitted - 3 min, 98°C, speed 2
  10. Then add tripe to the kCook bowl
  11. Cook with filler cap removed - 3 min, 110°C
  12. Then add white wine, tomato pulp and salt & pepper to the kCook bowl
  13. Cook with filler cap removed - 1 hr 30 min, 98°C, speed 3
  14. Transfer content of kCook bowl to 4 large serving bowls
  15. Garnish with pecorino cheese and mint leaves
  16. Serve
