Step preview
- Add unsalted butter and dark chocolate to a clean heatproof bowl
- Microwave in microwave until melted
- Add egg yolk and rum to the heatproof bowl
- Stir until combined then set aside
- Attach Whisk
- Add whipping cream to the Kenwood Bowl
- Mix with splashguard fitted - 2 min, Speed 5
- Transfer cream to medium bowl then set aside
- Clean Kenwood Bowl
- Attach Whisk
- Add egg white to the Kenwood Bowl
- Mix with splashguard fitted until soft peaks form - 2 min, Speed Max
- Add caster sugar to the Kenwood Bowl while machine is running
- Mix with splashguard fitted until well combined - 1 min, Speed Max
- Remove the Kenwood Bowl from the machine
- Transfer cream to Kenwood Bowl
- Fold gently until combined
- Transfer one third of meringue to chocolate mixture
- Fold gently until combined
- Transfer the rest of meringue to chocolate mixture
- Fold gently until combined
- Spoon chocolate mixture into 4 dessert glass
- Chill in fridge - 1 hr
- Serve
