Bring colour and taste to the party with these mini corn fritters. These bite sized golden fritters are full of flavour and heat, and served with a cool and creamy avocado dip on the side. Add more or less chillies for desired heat of your choice.

Step preview

  1. Line a clean plate with paper towels then set aside
  2. Attach the K-Beater
  3. Add all purpose flour, baking powder, egg and milk to the Cooking Chef XL Bowl
  4. Lift the Cooking Chef head and fit the heat shield
  5. Mix with splashguard fitted - 1 min, Speed 2
  6. Then add canned corn, green onion, red chili, smoked paprika, cilantro and salt & pepper to the Cooking Chef XL Bowl
  7. Mix with splashguard fitted until combined - 2 min, Speed 1
  8. Add vegetable oil to a clean frying pan
  9. Heat until hot - medium-high heat
  10. Spoon 1 tsp of sweetcorn batter into the pan
  11. Fry each side until golden brown - approx 2 min
  12. Transfer the fritters onto the lined plate
  13. Repeat the same process with the remaining batter
  14. Add avocado to a clean medium bowl
  15. Mash with a fork until creamy
  16. Add lime and sour cream to the medium bowl
  17. Mix until well combined
  18. Season with salt & pepper
  19. Serve
