This traybake is delicious and super easy to make. They are great on their own or alongside a hot drink. For an extra treat, top with a generous dollop of clotted cream. Wrap and keep for three days at room temperature.

Step preview

  1. Preheat an oven to 180ºC
  2. Grease a square pan and line with parchment paper
  3. Add butter into the appliance bowl, fit the splashguard
  4. Heat until browned - 5 minutes, 100ºC, speed Off
  5. Pour the melted butter into a small bowl and set aside
  6. Add the ingredients into a medium bowl
  7. Mix until combined then set aside
  8. Clean the appliance bowl and fit the Whisk Tool
  9. Add egg white into the appliance bowl, fit the splashguard
  10. Whisk - 3 minutes, speed Max
  11. Remove the bowl from the machine
  12. Carefully fold the whisked eggs into the dry ingredients until combined
  13. Then slowly pour the melted butter into the bowl
  14. Fold until combined
  15. Pour the mixture into the square pan and spread until level
  16. Scatter the ingredients on top
  17. Bake until golden brown - 40 minutes, 180°C
  18. Remove from the oven and let cool in the pan
  19. Cut into squares
  20. Dust with icing sugar
  21. Serve
