Step preview

  1. Add gluten-free flour, yellow cornmeal, oil and salt to a clean large mixing bowl
  2. Mix until combined
  3. Add water to the large mixing bowl
  4. Mix until dough forms
  5. Cover with kitchen towel
  6. Let rest - 20 min
  7. Attach the Pasta Roller attachment
  8. Adjust the setting to 0
  9. Sprinkle some flour between the rollers
  10. Transfer dough to work surface
  11. Divide into 12 equal pieces
  12. Roll into balls
  13. Cover with kitchen towel then set aside
  14. Take one dough ball
  15. Flatten into a circle
  16. Start on speed 1
  17. Transfer dough to Pasta Roller attachment
  18. Pass the dough through the rollers
  19. Repeat passing the dough through the rollers, adjusting the setting down each time until you reach setting 3
  20. Repeat the same with the rest of the dough balls
  21. Remove the attachment from the machine
  22. Transfer dough to lightly floured surface
  23. Cut into rounds
  24. Pre-heat a clean medium cast iron skillet - high heat
  25. Take one tortilla
  26. Cook each side - 30 sec
  27. Fill with your desired toppings
  28. Serve
