Filipino style chicken adobo is a simple dish packed full of flavour, which is even better served the day after making it. The chicken thighs are browned with the skin on and then cooked in a sauce of dark soy, garlic and traditionally a white cane vinegar which gives it acidity. Best served with plain rice or with garlic fried rice.

Step preview

  1. Add vegetable oil to the Cooking Chef XL Bowl
  2. Heat with splashguard fitted - 5 min, 160°C, Speed OFF
  3. Then add chicken thighs to the Cooking Chef XL Bowl
  4. Cook and turn half way through - 7 min, 160°C, Speed OFF
  5. Transfer the chicken to a plate
  6. Repeat the same with the remaining chicken thighs
  7. Season with salt and black pepper
  8. Add garlic clove, dark soy sauce, white cane vinegar, water, palm sugar, black peppercorns and bay leaves to the Cooking Chef XL Bowl
  9. Cook - 5 min, 105°C, Speed OFF
  10. Transfer the chicken into the appliance bowl
  11. Cook - 30 min, 100°C, Speed OFF
  12. Remove the chicken, place on a plate and set aside
  13. Cook until reduced by half - 15 min, 130°C, Speed OFF
  14. Transfer the chicken into the appliance bowl
  15. Cook - 5 min, 105°C, Speed OFF
  16. Remove the bay leaves
  17. Serve
