Friands are closely related to financiers. Some recipes call for the nuts to be toasted and the butter to be clarified, however this recipe is a quick version. Traditionally baked as small oval shapes in a specially designed friand moulds, they also work perfectly when baked in small amounts in a cupcake/ small muffin tin. This recipe finishes the friands with Kirsch-soaked cherries, chocolate ganache and pistachios for added indulgence - you could serve them warm dusted with icing sugar instead to keep it simple.

Step preview

  1. Preheat the oven to 180ºC
  2. Add butter into the appliance bowl, fit the splashguard
  3. Heat until melted – 2 minutes, 70º, speed off
  4. Transfer the melted butter into a medium bowl
  5. Using a pastry brush, generously brush each of the holes in the tin with some of the melted butter
  6. Reserve the remaining melted butter and let cool
  7. Add the ingredients into a large bowl, stir to combine and set aside
  8. Clean the appliance bowl and fit the Whisk tool
  9. Add egg whites into the appliance bowl, fit the splashguard
  10. Mix until frothy – 1 minute, speed 5
  11. Remove the Whisk tool, fit the K beater
  12. Transfer the sifted flour mixture into the appliance bowl
  13. Transfer the reserved melted butter and the ingredients into the appliance bowl
  14. Mix until just combined – 20 seconds, speed Min
  15. Then add the ingredients
  16. Mix until just combined – 20 seconds, speed Min
  17. Transfer the mixture into the muffin tin, filling each hole until ¾ full
  18. Bake until springy to touch – 10 minutes, 180ºC
  19. Remove from the oven and let cool in the tin - 5 minutes
  20. Run a sharp knife or palette knife around the edges of the friands to loosen any stubborn edges
  21. Turn out onto a wire rack to cool completely
  22. Add the ingredients into a small bowl, stir to combine and set aside
  23. Clean the appliance bowl and fit the Creaming Beater
  24. Add the ingredients into the appliance bowl
  25. Heat until melted – 5 minutes, 80ºC, speed Stir 3
  26. Transfer the chocolate ganache into a piping bag
  27. Cut the end of the piping bag to make a narrow 3 mm opening
  28. Drizzle the chocolate ganache across the top of friands in diagonal lines
  29. Using a spoon, add a few pieces of the soaked cherries on top
  30. Sprinkle to garnish
  31. Serve slightly warm
