This lamb gravy makes the perfect accompaniment to roasted lamb and is rich with red wine, stock, and herbs. If you would like to leave the red wine out, just substitute with the same amount of stock and follow the recipe as normal. This recipe can be made up to 3 days in advance, simply store in an airtight container in the fridge and reheat as needed.

  1. Attach the Stir Tool
  2. Add butter and vegetable oil to the Cooking Chef XL Bowl
  3. Lift the Cooking Chef head and fit the heat shield
  4. Heat with splashguard fitted - 1 min, 120°C, Stir 2
  5. Then add onion, celery stalk and carrot to the Cooking Chef XL Bowl
  6. Cook with splashguard fitted - 10 min, 120°C, Stir 3
  7. Remove the splashguard
  8. Add all purpose flour to the Cooking Chef XL Bowl
  9. Cook - 2 min, 98°C, Stir 1
  10. Then add red wine to the Cooking Chef XL Bowl
  11. Cook - 5 min, 101°C, Stir 2
  12. Then add lamb stock, bay leaves, fresh rosemary and fresh thyme to the Cooking Chef XL Bowl
  13. Cook - 35 min, 100°C, Stir 3
  14. Strain the gravy through a sieve into a jug
  15. Discard the vegetables and return the gravy into the appliance bowl
  16. Cook - 20 min, 105°C, Stir 3
  17. Add cornstarch and water to a clean small bowl
  18. Stir until combined
  19. Transfer cornflour mixture to Cooking Chef XL Bowl
  20. Cook - 10 min, 105°C, Stir 3
  21. Then season with salt to taste
  22. Serve
