A crisp chocolate shell filled with creamy ganache. We’ve used a bar mould measuring 6cm x 13cm and about 7mm deep.

Step preview

  1. Fit the Creaming Beater
  2. Add cream into the appliance bowl, fit the splashguard
  3. Heat - 5 minutes, 50ºC, speed Stir 1
  4. Then add 200 g of chocolate
  5. Heat and then scrape the bowl - 3 minutes, 50ºC, speed Stir 1
  6. Mix – 1 minute 30 seconds, speed Stir 1
  7. Transfer ganache into a piping bag and let cool
  8. Clean the appliance bowl and fit the Creaming Beater
  9. Add 360 g of chocolate into the appliance bowl, fit the splashguard
  10. Heat – 10 minutes, 50ºC, speed Stir 3
  11. Add the rest of chocolate
  12. Mix - 3 minutes, speed Stir 2
  13. Heat – 2 minutes, 30ºC, speed Stir 2
  14. Coat the moulds with a layer of chocolate
  15. Chill in the fridge until set
  16. Pipe a thin layer of ganache into the moulds
  17. Cover with another layer of chocolate
  18. Shake the mould to level the chocolate
  19. Chill in the fridge until solidified – 30 minutes
  20. Serve
