Step preview

  1. Grease a large bowl
  2. Add the ingredients into a jug and mix until combined
  3. Let rest – 5 minutes
  4. Fit the Dough Tool
  5. Add the ingredients into the appliance bowl
  6. Mix – 2 minutes, speed 2
  7. While the machine is running, slowly pour the milk mixture
  8. Mix – 2 minutes, speed 3
  9. Transfer the dough into the large bowl and cover with a damp kitchen towel
  10. Prove until doubled in size – 1 hour
  11. Grease two baking trays and line with parchment paper
  12. Gently knock back the dough
  13. Place the dough on a lightly floured work surface
  14. Using a rolling pin, roll out until 1.5cm thick
  15. Using a 7cm round cutter, cut out rounds
  16. Place the rounds on the baking trays and space them 5cm apart
  17. Cover the doughnuts with damp tea towels
  18. Prove – 1 hour
  19. Line a plate with paper towels
  20. Fill a large saucepan with oil until 1/3 full
  21. Heat until the oil reaches 170ºC
  22. Working in batches, carefully place the doughnuts into the hot oil
  23. Fry on each side until golden brown – 3 minutes
  24. Place on the paper towels and let cool completely
  25. Now, make the icing and filling
  26. Add the ingredients into a small bowl and mix until combined
  27. Dip the top of each doughnut into the icing
  28. Place on the plate and let the icing set
  29. Use a skewer to poke a hole in the side of each doughnut
  30. Transfer jam into a piping bag and cut 0.5cm from the tip
  31. Pipe jam into doughnuts
  32. Serve
