Sfincione, meaning ‘spongy’, originated in Sicily, and might be a little bit different to the thin, crispy pizzas with a round crust that you’re used to. Made in a pan, this pizza has a thick, focaccia-like base, which is covered in cheese, followed by the passata-based sauce. While this may seem odd, the sauce reduces further on top of the pizza during baking, resulting in a delicious punch of tomato flavour, so use the best quality passata you can find! To make this pizza, we have used a 30cm x 25cm x 5cm baking tray.

  1. Make the sauce
  2. Fit the Stir Tool
  3. Add oil into the appliance bowl
  4. Heat - 1 minute, 110ºC, speed off
  5. Add the next ingredients
  6. Heat - 2 minutes, 110ºC, speed Stir 2
  7. Then add the next ingredients
  8. Heat - 8 minutes, 96ºC, speed Stir 2
  9. Remove the basil sprig
  10. Transfer the sauce to a large bowl and let cool
  11. Now, make the dough
  12. Clean the appliance bowl and fit the Dough Tool
  13. Add the ingredients into the appliance bowl and let rest – 5 minutes
  14. Then add the next ingredients
  15. Mix until the dough comes together - 1 minute, speed 1
  16. Knead – 7 minutes, speed 2
  17. Remove the Dough Tool and fit the splashguard
  18. Prove – 1 hour 30 minutes, 30ºC, speed off
  19. Pre-heat an oven - 180ºC
  20. Grease a medium-sized shallow baking tray evenly with 1 Tbsp of olive oil
  21. Carefully transfer the dough to the baking tray and gently spread it out
  22. Top the dough with cheese
  23. Spread the tomato sauce over the cheese evenly
  24. Sprinkle with the remaining ingredients
  25. Bake – 25 minutes, 180ºC
  26. Remove from the oven and let cool slightly – 5 minutes
  27. Serve
