This flavourful, meat-free alternative to traditional pork or chicken broths uses a variety of vegetables to achieve the same richness and umami. Not only is this recipe much quicker than a long-cooked bone broth, but it can also be easily veganised by leaving off the ramen egg garnish.

  1. Add the ingredients into the appliance bowl, fit the splashguard
  2. Cook – 20 minutes, 130ºC, speed off
  3. Cook – 1 hour 30 minutes, 98ºC, speed off
  4. Then add the next ingredient
  5. Leave to steep - 10 minutes
  6. Add the ingredients into a small bowl, mix until combined and set aside
  7. Strain the content of the appliance bowl into a large bowl and discard vegetables and kombu
  8. Add the content of the small bowl into the large bowl and stir to combine
  9. Add noodles to serving bowl and ladle over broth
  10. Top with the remaining ingredients
  11. Serve
