Step preview

  1. Fit the Dough Tool
  2. Add the ingredients into the appliance bowl, fit the splashguard
  3. Heat – 3 minutes, 35ºC, speed Min
  4. Then add the next ingredients
  5. While the machine is running, gradually add butter and mix - 10 minutes, speed 1
  6. Remove the Dough Tool
  7. Scrape down the sides of the bowl and fit the splashguard
  8. Prove until doubled in size - 1 hour 30 minutes, 30ºC, speed off
  9. Grease a large baking tray
  10. Place the dough on a lightly floured work surface
  11. Divide into 12 equal pieces and shape each piece into a ball
  12. Place the dough balls on the baking tray and cover with greased plastic wrap
  13. Prove overnight in the fridge
  14. Remove the buns from the fridge and let rest – 20 minutes
  15. Preheat the oven - 160ºC
  16. Add the next ingredients into a small bowl and stir to combine
  17. Brush the buns with the egg wash
  18. Bake until golden brown – 20-25 minutes, 160ºC
  19. Remove from the oven and let cool on a wire rack
  20. Clean the appliance bowl and fit the Whisk Tool
  21. Add the ingredients into the appliance bowl, fit the splashguard
  22. Mix - 2 minutes, speed Max
  23. Split the buns lengthwise slightly
  24. Fill the buns with the whipped cream
  25. Add fruit of your choice (optional)
  26. Smooth the excess of cream with a spatula or the back of a spoon
  27. Sprinkle with icing sugar or decorate with chopped nuts
  28. Serve
