Mince pies topped with meringue are a delicious twist on the traditional British Christmas treat. The pies consist of a sweet and spicy filling made from dried fruits, mixed with suet and spices, all encased in a buttery pastry shell. The meringue topping is made from whipped egg whites and sugar, which are lightly browned in the oven to create a crisp outer layer. The combination of the sweet and tangy mincemeat filling with the light and fluffy meringue topping creates a perfect balance of flavours and textures that are sure to delight your taste buds.

Step preview

  1. Fit the K-Beater
  2. Add the ingredients into the appliance bowl
  3. Mix - 2 minutes, speed 2
  4. Then add the next ingredient
  5. Mix – 1 minute, speed 2
  6. Wrap the pastry in plastic wrap
  7. Chill in the fridge – 20 minutes
  8. Preheat the oven - 180ºC
  9. Place the chilled pastry on a lightly floured work surface
  10. Using a rolling pin, roll out until 5mm thick
  11. Cut the pastry into rounds, big enough for the holes of the cupcake tin
  12. Line the cupcake tin with the pastry rounds
  13. Bake – 5 minutes, 180ºC
  14. Remove from the oven and add the filling into each pastry cup
  15. Bake until golden brown – 10-15 minutes, 180ºC
  16. Remove from the oven and let cool in the tin
  17. Now, make the meringue
  18. Clean the appliance bowl and fit the Whisk Tool
  19. Add the next ingredients into the appliance bowl, fit the splashguard
  20. Mix - 1 minute, speed Max
  21. While the machine is running, gradually add sugar and mix – 3 minutes, speed Max
  22. Transfer the meringue to a piping bag fitted with a large plain tip
  23. Pipe a swirl of meringue onto each pie
  24. Use a blowtorch to lightly toast the meringue
  25. Serve
