Step preview

  1. First, make the starter dough
  2. Add the ingredients into a large bowl and mix to combine
  3. Cover with plastic wrap and prove overnight at room temperature until doubled in size
  4. Now, make the second dough
  5. Fit the Dough Tool
  6. Add the ingredients and the starter dough into the warming bowl
  7. Mix – 4 minutes, speed 2
  8. Remove the Dough Tool and fit the splashguard
  9. Prove – 45 minutes, heat setting 3, speed off
  10. Gently knock back the dough

  12. Grease a large baking tray
  13. Transfer the dough to a lightly greased work surface
  14. Divide the dough into four equal pieces and roll each piece into a ball
  15. Cover with a kitchen towel and let rest – 15 minutes
  16. Take one dough ball and flatten into a 12cm x 12cm square
  17. Tuck in the edges on one side and roll the dough inwards into a log
  18. Press the seam to seal the dough
  19. Gently roll the dough into a 30cm long log
  20. Place the dough on the baking tray, seam side down
  21. Cover with a damp kitchen towel and prove in a warm place – 45 minutes
  22. Repeat the same process with the rest of the dough
  23. Preheat the oven - 220ºC
  24. Place a small oven proof container filled with boiling water at the bottom of the oven
  25. Using a very sharp knife held at about 45º, make three lengthwise slashes in each baquette
  26. Place the baguettes on the baking tray and bake until golden brown – 25-30 minutes, 220ºC
  27. Remove from the oven and let cool slightly on a wire rack
  28. Serve
