Step preview

  1. Preheat the oven - 175ºC
  2. Grease the cake tins and line with parchment paper
  3. Sift the ingredients into a large bowl
  4. Fit the K-Beater
  5. Add the ingredients into the appliance bowl
  6. Mix, then scrape the sides of the bowl - 3 minutes, speed 4
  7. While the machine is running add eggs, one at a time and mix - 2 minutes, speed Min
  8. Add the next ingredients
  9. Mix - 30 seconds, speed Min
  10. Add dry ingredients
  11. Mix - 1 minute, speed Min
  12. Remove the K-Beater
  13. Using a spatula, fold in sprinkles until combined
  14. Divide the cake mix into two prepared tins
  15. Bake until the skewer inserted comes out clean - 30 -35 minutes, 175ºC
  16. Remove from the oven and allow to cool completely
  17. Make the cream cheese frosting:
  18. Clean the appliance bowl and fit the K-Beater
  19. Add the ingredients into the appliance bowl
  20. Mix, then scrape the sides of the bowl - 2 minutes, speed 3
  21. Add the next ingredients, fit the splashguard
  22. Mix – 2 minutes, speed 3
  23. Now assemble the cake:
  24. Trim the cooled sponge layers with a cake leveller or use a bread knife
  25. Place one of the cakes on a cake board and spread with a layer of frosting
  26. Place on top another sponge layer
  27. Spread a thin layer of frosting around the top and sides to crumb coat the cake
  28. Chill in the fridge until set – 20-30 minutes
  29. Remove from the fridge and cover the sides and the top of the cake with frosting
  30. Transfer the remaining frosting into a piping bag fitted with a large star tip
  31. Pipe rosettes of frosting around the top of the cake
  32. Hold the cake at an angle over a large bowl and press rainbow sprinkles around the side of the cake
  33. Decorate the top with rainbow sprinkles (optional)
  34. Serve
