Truffles are essentially a chocolate ganache which is chilled until firm before rolling into balls and coating in cocoa powder- alternative toppings could be sprinkles, crushed nuts or coconut. You can also dip the truffles in melted or tempered chocolate. Try adding add your own flavouring like vanilla, orange, or ginger- or make them extra special by adding a few teaspoons of alcohol such as rum, whiskey or brandy. For successful truffles use high quality chocolate, do not use chocolate chips as the mixture will not thicken. Chop the chocolate into very small pieces, the finer the chocolate chunks, the quicker they’ll melt into the warm cream. Store truffles in an airtight container at room temperature for 3-4 days, or in the refrigerator for up to two weeks.

  1. Fit the Creaming Beater
  2. Add chocolate into the appliance bowl
  3. Add cream into a medium saucepan
  4. Heat until steaming (just below boiling) – medium-high heat
  5. Carefully pour the hot cream over chocolate
  6. Mix until combined – 3-5 minutes, speed Min
  7. Transfer the ganache into a flat shallow baking tray or ceramic dish and cover with plastic wrap
  8. Chill in the fridge until set – 1 hour
  9. Retrieve the ganache from the fridge and remove plastic wrap
  10. Roll into 20g balls, then roll in cocoa powder or your choice of topping
  11. Refrigerate until set – 30 minutes
  12. Serve
