Crème Pâtissière, also known as pastry cream, is a rich and creamy, staple filling for a variety of bakery products such as croissants, eclairs, tarts and many more. Crème Pâtissière is traditionally flavoured with vanilla, but it is a versatile base that can be easily flavoured with chocolate, liqueur, coffee, and fruit purees. This recipe makes 1.5kg of Crème Pâtissière and for best results, chill overnight.
