Delicious lightly fried aubergine in an aromatic tomato and lentil sauce. Serve with rice, naan or chapati and a sprinkling of coriander. You can swap the tinned lentils for dried but you will need to also add more stock.

  1. Line a baking tray with paper towels
  2. Add the ingredients into a clean bowl and mix to coat
  3. Fit the Stir Tool
  4. Working in batches, add some of the coated eggplant into the appliance bowl

  6. Place the cooked eggplant on paper towels to drain any excess oil
  7. Repeat the same cooking process with the remaining eggplant
  8. Clean the appliance bowl and fit the Stir Tool
  9. Add oil into the appliance bowl
  10. Heat - 1 minute, 140ºC, speed off
  11. Then add onion
  12. Cook - 5 minutes, 120ºC, speed Stir 2
  13. Then add the next ingredients
  14. Cook - 2 minutes, 120ºC, speed Stir 2
  15. Then add the next ingredients
  16. Cook - 1 minute, 120ºC, speed Stir 3
  17. Then add the next ingredients
  18. Cook - 10 minutes, 95ºC, speed Stir 3
  19. Then add cooked eggplant
  20. Cook - 25 minutes, 94ºC, speed Stir 3
  21. Then add cilantro
  22. Stir - 30 seconds, speed Min
  23. Serve
