An indulgent and comforting dish. Have as a side dish along with a vegan roast and use your favourite vegan cheese to top. If you want to make a larger quantity, you can. Just double the cauliflower and the sauce ingredients, cook in batches and use two baking dishes. You could also swap the cheese on top for some crunchy, herby breadcrumbs.

  7. Heat – 1 minute, 110ºC, speed 3
  8. Then add the next ingredient
  9. Heat – 5 minutes, 110ºC, speed 6
  10. Then add the next ingredient
  11. Cook – 15 minutes, 98ºC, speed 6
  12. Assemble the Direct Prep attachment with the Coarse grating disc, and turn it to position 1
  13. Grate cheese into the appliance bowl
  14. Then add the next ingredient
  15. Whisk – 5 minutes, speed 4
  16. Transfer the cauliflower into the appliance bowl
  17. Whisk – 1 minute, speed 4
  18. Preheat the oven – 200°C
  19. Transfer the cauliflower mixture into a baking dish
  20. Grate the remaining cheese into the baking dish and spread evenly
  21. Bake – 15 minutes, 200°C
  22. Serve
