Made with yellow split peas, fava is a creamy mezze dip from the island of Santorini flavoured with garlic, vegetables, bay leaves and lemon. Serve with warm toasted pita or crunchy vegetable crudites.

Step preview

  1. Fit the Stir Tool
  2. Add water into the appliance bowl, fit the splashguard
  3. Heat until boiling – 5 minutes, 140ºC, speed Off
  4. Then add peas
  5. Stir to remove impurities – 1 minute, speed Stir 1
  6. Drain onto colander then set aside
  7. Clean the appliance bowl and fit the Stir Tool
  8. Add oil into the appliance bowl
  9. Heat until hot – 1 minute, 120ºC, speed Off
  10. Then add the next ingredients
  11. Cook until softened – 5 minutes, 120ºC, speed Stir 2
  12. Then add the drained peas and the next ingredient
  13. Cook until all liquid has been absorbed – 30 minutes, 102ºC, speed Stir 2
  14. Let cool – 30 minutes
  15. Fit the Knife Blade to the Food Processor attachment
  16. Add content of the appliance bowl into the attachment
  17. Then add the next ingredients
  18. Blend until smooth – 2 minutes, speed 2
  19. Remove the attachment from the machine and let the dip cool
  20. Serve
