A delicious pasta with a twist. The beetroot turns the dough into a beautiful pink colour and the walnut sauce makes this dish rich and full of flavour. You can use the pasta once dried or cover and chill in the fridge for up to 24 hours

Step preview

  1. Making the pasta:
  2. Fit the Knife blade to the Food Processor attachment
  3. Add beetroot into the attachment
  4. Blend until pureed - about 1 minute, speed Max
  5. Remove the attachment from the machine and set aside
  6. Fit the Dough Tool
  7. Add the beetroot puree and the next ingredients into the appliance bowl, fit the splashguard
  8. Knead until a smooth dough formed - 3 minutes, speed 1
  9. Flatten the dough slightly and wrap in plastic wrap
  10. Chill in the fridge - 30 minutes
  11. Transfer the dough onto a lightly floured work surface and divide into four equal pieces
  12. Take one piece and cover the rest with a tea towel
  13. Flatten the dough into a long flat disc
  14. Attach the Lasagne Roller attachment
  15. Adjust the setting to 1, sprinkle some flour between the rollers
  16. Start the machine and pass the dough through the rollers - speed 1
  17. Fold the dough in three, rotate and repeat several times
  18. Repeat passing through the rollers, reducing the setting each time until you reach setting 5 - speed 1
  19. Set aside the rolled-out dough
  20. Repeat with the other pieces, flattening them into a long flat disc
  21. Pass the dough through the rollers on setting 0 and reducing each time until you reach setting 5 - speed 1
  22. Remove the attachment from the machine
  23. Attach the Fettuccine Pasta Cutter attachment
  24. Start the machine and feed the dough through the cutter - speed 1
  25. Sprinkle the pasta strands with semolina and let dry - 30 minutes
  26. Making the sauce:
  27. Clean the appliance bowl and fit the Stir Tool
  28. Add butter into the appliance bowl, fit the splashguard
  29. Heat until melted - 1 minute, 115ºC, speed Stir 1
  30. Then add the next ingredients
  31. Cook until softened - 3 minutes, 115ºC, speed Stir 1
  32. Then add walnuts
  33. Cook until combined - 30 seconds, 115ºC, speed Stir 1
  34. Then add cream
  35. Cook until well combined - 2 minutes, 105ºC, speed Stir 1
  36. Then add the next ingredients
  37. Cook until well combined - 2 minutes, 105ºC, speed Stir 1
  38. Season to taste
  39. Stir until ready to use - 5 minutes, speed Stir 1
  40. Add water into a large saucepan until 3/4 full
  41. Then add salt
  42. Heat until boiling - medium-high heat
  43. Then add pasta into the saucepan
  44. Cook and then drain, reserving some pasta water - 2-4 minutes
  45. Divide the fettuccini between the serving bowls
  46. Pour the sauce onto the pasta, adding pasta water to loosen, if necessary
  47. Mix until well combined
  48. Garnish, if desired
  49. Serve
