A delicious moist sponge topped with a chocolate ganache. Great for gatherings and parties with vegan guests. To make this recipe, we have used a 23 cm x 30 cm traybake tin.

  1. Making the ganache:
  2. Fit the Whisk Tool
  3. Add the ingredients into the appliance bowl
  4. Whisk until combined - 3 minutes, speed 3
  5. Transfer the ganache into a jug and cover
  6. Chill in the fridge until needed
  7. Preheat the oven - 180ºC
  8. Grease a traybake tin and line with parchment paper
  9. Clean the appliance bowl and fit the K-Beater
  10. Add the ingredients into the appliance bowl
  11. Let rest - 2 minutes
  12. Then add the next ingredients
  13. Sift the next ingredients into a bowl
  14. Then add the flour mixture into the appliance bowl
  15. Mix until combined and then scrape the bowl - 1 minute 30 seconds, speed Min
  16. Mix until combined - 30 seconds, speed Min
  17. Pour the batter into the tin
  18. Bake until a skewer inserted comes out clean - 25 minutes, 180ºC
  19. Remove from the oven and let cool in the tin - 15 minutes
  20. Transfer to a cooling rack and let cool completely
  21. Spread the ganache of top of the cake
  22. Decorate with sprinkles
  23. Serve
