Handmade steamed dumplings with a beef and onion filling, lamb can also be used for the filling instead and you could add your own choice of ground spices such as coriander, paprika or cumin to the filling. The dumplings are traditionally steamed in a multi-tiered metal steamer, called Mantovarka. You can cook Manti in batches in any steamer instead.

  1. Making the dough:
  2. Fit the Dough Tool
  3. Add the ingredients into the appliance bowl
  4. Knead until the dough has formed - 5 minutes, speed 1
  5. Transfer the dough into a clean bowl and cover with a damp tea towel
  6. Let rest - 30 minutes
  7. Making the filling:
  8. Fit the Knife blade to the Food Processor attachment
  9. Add the ingredients into the attachment
  10. Pulse until the mixture reaches the desired consistency
  11. Remove the attachment from the machine
  12. Transfer the dough to a lightly floured work surface
  13. Cut the dough into quarters
  14. Take one quarter and cover the rest with a damp tea towel
  15. Roll out the dough until about 1 cm thick
  16. Attach the Lasagne Roller attachment
  17. Adjust the setting to 0, sprinkle some flour between the rollers
  18. Start the machine and pass the dough through the rollers - speed 1
  19. Repeat, reducing the setting each time until you reach setting 6 - speed 1
  20. Roll out another quarter of the dough until about 1 cm thick
  21. Repeat, starting on setting 0 and reducing each time until you reach setting 6 - speed 1
  22. Repeat the same process with the remaining dough
  23. Cover the dough sheets with a damp tea towel and set aside
  24. Remove the attachment from the machine
  25. Sprinkle a plate or tray with flour
  26. Place one dough sheet on a work surface
  27. Cut out rounds using the cutter
  28. Add a heaped teaspoon of the filling into the centre of the dough round
  29. Pinch two opposite sides of the dough circle together at the centre only to form a half-moon shape, enclosing the filling
  30. Rotate the dumpling so that one of the open ends faces you
  31. Pinch the remaining two sides together, overlapping them slightly, to seal the dumpling completely
  32. Rotate the dumpling again
  33. Bring two outer corners round the dumpling and pinch them together to join
  34. Place the shaped dumpling on the floured plate or tray and cover with a damp tea towel
  35. Repeat the same process with the remaining dough
  36. Lightly grease the steamer with a little oil
  37. Add the dumplings into the steamer
  38. Steam until piping hot inside – 40-45 minutes
  39. Serve immediately
