Handmade noodles are a delicious addition to our Lagman soup recipe, follow this method to make your own using the pasta attachments, then follow our Lagman soup recipe, adding in the uncooked noodles in the last cooking stage. We have also included boiling instructions using a saucepan on the hob, if you would prefer to do this.

  1. Add the ingredients into a jug and mix until the salt has dissolved
  2. Fit the Dough Tool
  3. Add the ingredients into the appliance bowl
  4. Then add the salted water when the machine is running
  5. Knead until a dense, homogenous dough has formed - 5 minutes, speed 1
  6. Remove the dough from the bowl and form into a ball
  7. Transfer the dough into a clean bowl and cover with a tea towel
  8. Let rest - 15 minutes
  9. Place the dough on a work surface and knead - 1-2 minutes
  10. Cover the dough with a tea towel and let rest - 15 minutes
  11. Repeat the kneading process
  12. Cover the dough with a tea towel and let rest at room temperature - 20-30 minutes
  13. Cut the dough into 4 equal pieces
  14. Take one piece and cover the rest with plastic wrap
  15. Roll out the dough until about 1 cm thick
  16. Attach the Lasagne Roller attachment
  17. Adjust the setting to 0, sprinkle some flour between the rollers
  18. Start the machine and pass the dough through the rollers - speed 1
  19. Repeat, reducing the setting each time until you reach setting 3 or 4 - speed 1
  20. Roll out the other dough pieces until about 1 cm thick
  21. Repeat, starting on setting 0 and reducing each time until you reach setting 3 or 4 - speed 1
  22. Remove the attachment from the machine
  23. Attach the Spaghetti Pasta Cutter attachment
  24. Start the machine and feed the dough through the cutter - speed Min
  25. Place the cut noodles on a lightly floured work surface
  26. Add the ingredients into a large saucepan
  27. Heat until hot - medium-high heat
  28. Cook the pasta in small batches until al dente - 5-6 seconds
  29. Remove the noodles with a slotted spoon and drain
  30. Drizzle the noodles with oil so that they do not stick together and let cool
  31. Repeat the same process with the remaining noodles
  32. Use as desired
