Samsa is a delicious savoury snack, consisting of flaky pastry surrounding a simple meat and onion filling, widely enjoyed in countries like Uzbekistan, Kazakhstan, Kyrgyzstan, and Tajikistan. This recipe uses minced beef, but you can use your preferred meat for the filling.

Step preview

  1. Fit the Dough Tool
  2. Add the ingredients into the appliance bowl
  3. Knead until a dough forms – 4 minutes, speed 1
  4. Transfer the dough onto a lightly floured work surface
  5. Cover with a tea towel and let rest – 10 minutes
  6. Divide the dough into six equal pieces and roll each piece into a ball
  7. Add a little more flour to the work surface and flatten one ball into a disc
  8. Roll out into a circle until 5 mm thick, about 20 cm wide
  9. Transfer the dough circle onto a plate
  10. Brush the dough with butter
  11. Roll out the next piece of dough, place on top of the other dough circle and brush with butter
  12. Repeat rolling and layering with the rest of the dough and do not brush the last top piece of dough with butter
  13. Cover with plastic wrap and chill in the freezer – 10 minutes
  14. Retrieve the layered dough and transfer onto a lightly floured work surface
  15. Roll out the dough into a rectangle, about 5 mm thick
  16. Roll the dough into a log, along the longest edge
  17. Cover with a tea towel and set aside
  18. Preheat the oven - 200ºC
  19. Lightly grease a baking tray and set aside
  20. Add the ingredients into a clean bowl and mix to thoroughly combine
  21. Transfer the dough onto a lightly floured work surface
  22. Divide the dough into 12 equal pieces
  23. Take one piece of dough and cover the rest of the dough with a tea towel
  24. Flatten the dough into a disc, ensuring the layers are still visible
  25. Roll out into a circle, about 15 cm wide
  26. Repeat with the rest of the dough pieces
  27. Add 1-1.5 Tbsp of filling into the centre of each piece of dough
  28. Bring together opposite edges of the circle and pinch in the centre
  29. Pinch one side of the centre to seal, leaving the other side open
  30. Take the centre of the open edge and lift to meet the first seal
  31. Pinch along both edges to create a triangle shape
  32. Turn over and place seam side down onto the baking tray
  33. Repeat with the rest of the dough
  34. Add the ingredients into a small bowl and whisk to combine
  35. Brush each triangle of dough with egg wash
  36. Sprinkle seeds on top
  37. Bake until golden brown – 20-25 minutes, 200°C
  38. Remove from the oven
  39. Serve
