This indulgent, spiced pudding is a great ending for festive dinners. Serve with freshly whipped cream or ice cream. We have used a large traybake tin, 30 cm x 20 cm, to make this recipe.

Step preview

  1. Making the cake:
  2. Add dates into a bowl and cover them with water
  3. Let soak - 30 minutes
  4. Once soaked, drain the dates into a colander
  5. Transfer the dates back into the bowl
  6. Then add vanilla paste and mash to combine
  7. Preheat the oven - 180ºC
  8. Grease and line the tin with parchment paper
  9. Fit the K-Beater
  10. Add the ingredients into the appliance bowl
  11. Then add the mashed dates
  12. Mix until combined - 1 minute 30 seconds, speed Min
  13. Pour the batter into the tin
  14. Bake until a skewer inserted comes out clean - 35 minutes, 180ºC
  15. Making the sauce:
  16. Clean the appliance bowl and fit the Stir Tool
  17. Add the ingredients into the appliance bowl
  18. Cook until combined - 3 minutes, 80ºC, speed Stir 1
  19. Cook until thickened - 2 minutes, 100ºC, speed Stir 2
  20. Remove the cake from the oven and pour over the sauce
  21. Serve
