This Christmas biscuits are just the right blend of chewy and crunchy and packed with flavour. You can adjust the level of ginger to fit your tastes. We have shown a few ideas for decoration using royal icing and sprinkles, so let your creativity loose and have fun! The number of servings will depend on the size of your gingerbread man cutter. We used a 12.7 cm (5-inch) cutter.

Step preview

  1. Fit the K-Beater
  2. Add the ingredients into the appliance bowl
  3. Mix until the mixture resembles crumbs - 2 minutes 30 seconds, speed 3
  4. Then add the next ingredients
  5. Mix until the mixture has come together - 2 minutes, speed 2
  6. Chill in the fridge - 30 minutes
  7. Preheat the oven - 180ºC
  8. Line baking trays with parchment paper
  9. Transfer the dough to a lightly floured work surface
  10. Roll out the dough until about 5 mm thick
  11. Cut out the gingerbread men shapes using the cutter
  12. Place the shaped dough on the baking trays, spaced apart evenly
  13. Re-roll and cut any leftover scraps until all the dough is used
  14. Bake until light golden brown and the edges of the biscuits are starting to crisp - 15 minutes, 180ºC
  15. Transfer the biscuits to a cooling rack and let cool completely
  16. Decorate as desired
  17. Serve
