This basic puff pastry recipe is a flaky light pastry made from dough with a layer of butter, which is repeatedly rolled and folded. It is these laminations that give the flaky texture after baking. It can be used for anything from apple turnovers, cheese straws and sausage rolls.

  2. Add the ingredients into the appliance bowl
  3. Knead until a dough has formed - 5 minutes, speed Min
  4. Wrap the dough in plastic wrap and chill in the fridge - 30 minutes
  5. Line a work surface with parchment paper
  6. Place butter on top and cover with another piece of parchment paper
  7. Roll out the butter into a rectangle, about 15 x 10 cm
  8. Transfer the chilled pastry to a lightly floured work surface
  9. Gently roll out the pastry into a rectangle
  10. Place the butter into the centre of the pastry
  11. Fold the edges of the pastry over to enclose the butter completely
  12. Tightly pinch the seams to seal
  13. Roll out the pastry until about 3-5 mm thick
  14. Fold one edge to the centre
  15. Then fold the other edge to cover the first fold
  16. Turn the dough 90°
  17. Immediately repeat the rolling and folding process
  18. Wrap the dough in plastic wrap and chill in the fridge - 30 minutes
  19. Repeat the folding and chilling process twice more, a total of 6 folds
  20. Use as desired
