These vibrant green mojito cupcakes have a delicious minty cupcake base topped with a buttercream packed with fresh lime juice, zest, and just the right amount of rum for the perfect boozy dessert! If you don't have a piping bag and nozzle you can use a spoon to smooth icing on to the cupcakes and decorate with just lime zest and mint leaves. The cupcakes can be stored covered at room temperature for up to two days.

  1. Making the cupcakes:
  2. Preheat the oven - 175ºC
  3. Line a cupcake tin with cupcake cases
  4. Fit the K-Beater
  5. Add the ingredients into the appliance bowl
  6. Mix until light and fluffy and then scrape the bowl - about 2 minutes, speed 3
  7. Then add the next ingredients
  8. Mix until all ingredients are well incorporated - about 2 minutes, speed Min
  9. Then add the next ingredients
  10. Mix until combined - about 1 minute, speed Min
  11. Then add the next ingredients
  12. Mix, adding more green food colouring, until the mixture has a vibrant green colour - about 2 minutes, speed 2
  13. Divide the mixture between the cupcake cases
  14. Bake until a skewer inserted comes out clean - 15 minutes, 175ºC
  15. Remove from the oven and let cool completely
  16. Making the buttercream:
  17. Clean the appliance bowl and fit the K-Beater
  18. Add the ingredients into the appliance bowl
  19. Mix until starting to combine - about 2 minutes, speed Min
  20. Mix until smooth and well combined and then scrape the bowl - about 2 minutes, speed 3
  21. Mix until thickened - about 2 minutes, speed Min
  22. Transfer the buttercream into a piping bag fitted with a large open star tip
  23. Pipe swirls of the buttercream onto each cupcake
  24. Then zest a lime over the cupcakes
  25. Garnish, if desired
  26. Serve
