A middle ground between cake and bread, Babka is a dough filled with cinnamon spiced chocolate rolled up and twisted to form its distinctive shape then baked in a loaf tin. A perfect indulgent treat to accompany a cup of coffee.

  1. Fit the Dough Tool
  2. Grease a loaf tin
  3. Add the ingredients into the appliance bowl, fit the splashguard
  4. Knead until combined - about 2 minutes, speed Min
  5. Then add cubed butter gradually while the machine is running
  6. Knead until a smooth dough has formed - about 5 minutes, speed Min
  7. Remove the bowl from the machine and cover with a damp tea towel
  8. Prove until doubled in size - 1 hour
  9. Chill in the fridge - 30 minutes
  10. Add the ingredients into a saucepan
  11. Heat until melted - medium heat
  12. Remove from the heat and let cool
  13. Transfer the dough to a lightly floured work surface and roll out into a large rectangle
  14. Spread the chocolate mixture over the surface of the dough
  15. Roll up the dough tightly along the longest edge
  16. Leave a gap about 2 cm at one end, then cut the dough lengthways down the centre
  17. Turn the two cut edges to face upwards
  18. Twist the dough lengths around each other
  19. Transfer the shaped dough to the loaf tin and cover with a tea towel
  20. Preheat the oven - 180ºC
  21. Brush the dough with beaten egg
  22. Bake until golden brown, covering with foil, if the loaf begins to burn - 1 hour, 180ºC
  23. Remove from the oven and let cool in the tin - 10 minutes
  24. Transfer onto a cooling rack and let cool completely
  25. Serve
