Soft and fluffy cinnamon buns with a festive twist, mincemeat, (a mixture of dried fruit, apple, spices and brandy, traditionally used in mince pies), is added with the cinnamon butter filling. Once baked they are drizzled with a cream cheese frosting, spiked with orange liqueur and some orange zest. Serve them slightly warm from the oven with any remaining cream cheese topping on the side for the ultimate festive treat. You can make 8 large or 12 smaller sized buns with this recipe. Prove the dough overnight in a container in the fridge if you want to prepare ahead, or to develop flavour and texture in the finished buns- bringing the dough back to room temperature before rolling it out to fill and shape the buns.

Step preview

  1. Add the ingredients into a saucepan
  2. Heat until the butter has melted - medium heat
  3. Fit the Dough Tool
  4. Transfer the milk mixture into the appliance bowl
  5. Then add the next ingredients
  6. Knead until the dough has formed - 10 minutes, speed 1
  7. Transfer the dough into a clean bowl and cover with a damp tea towel
  8. Prove until doubled in size - 1 hour 30 minutes
  9. Making the cinnamon butter:
  10. Clean the appliance bowl and fit the K-Beater
  11. Add the ingredients into the appliance bowl
  12. Mix until combined - 1 minute, speed 2
  13. Transfer the cinnamon butter into a clean bowl and set aside
  14. Transfer the dough to a lightly floured work surface
  15. Flatten the dough slightly, bring the left side over the right side
  16. Then fold the right side over the left side
  17. Roll out the dough and shape into a ball
  18. Cover the dough with a tea towel and let rest - 10-20 minutes
  19. Grease a baking tray and set aside
  20. Roll out the dough into a rectangle until 5 mm thick
  21. Spread the cinnamon butter evenly over the dough
  22. Then spread the mincemeat over the dough
  23. Use a pizza wheel or sharp knife to cut the dough into 8 (or 12 for smaller buns) equal strips - starting at the long edge nearest you and cutting upwards
  24. Roll each strip up individually, starting at the long edge nearest you and rolling away from you
  25. Place the buns on the baking tray, spiral side up and space them 2 cm apart
  26. Cover with a damp tea towel and prove until doubled in size - 30 minutes
  27. Preheat the oven - 180ºC
  28. Bake the buns until they start to colour - 15-18 minutes, 180ºC
  29. Cover with foil and bake until golden brown - 12 minutes, 180ºC
  30. Remove from the oven and let cool in the tin
  31. Making the frosting:
  32. Clean the appliance bowl and fit the Creaming Beater
  33. Add the ingredients into the appliance bowl
  34. Mix until smooth - 20 seconds, speed 3
  35. If the mixture is lumpy, warm it gently over a low heat whilst stirring by hand, until smooth
  36. Drizzle the frosting over the slightly warm buns
  37. Garnish, if desired
  38. Serve
