This mushroom soup is a classic on the Christmas Eve table, served traditionally as one of twelve dishes! It is a delicious soup, often served with noodles, and full of aroma that fills the whole house. This recipe uses dried mushrooms, so you will need to soak them beforehand, overnight for best results, or for a minimum of a few hours

Step preview

  1. Add the ingredients into a bowl and cover
  2. Let soak in the fridge overnight
  3. Fit the Stir Tool and Stir Assist Clip
  4. Add butter into the appliance bowl
  5. Heat until the butter has melted - 1 minute, 110ºC, speed Off
  6. Then add onions
  7. Cook until translucent - 5 minute, 110ºC, speed Stir 2
  8. Strain the soaked mushrooms through a fine sieve into a jug
  9. Transfer the liquid into the appliance bowl
  10. Rinse and drain the mushrooms
  11. Add the mushrooms into the appliance bowl
  12. Then add the next ingredients, fit the splashguard
  13. Cook until it starts to boil - 5 minutes, 120ºC, speed Stir 4
  14. Cook until the mushrooms have softened - 45 minutes, 105ºC, speed Stir 4
  15. Strain the soup through a sieve into a clean bowl, reserving 200 g of the broth in a jug
  16. Transfer the soup from the bowl into the appliance bowl
  17. Cut the mushrooms into strips
  18. Then add the mushrooms into the appliance bowl
  19. Add the ingredients into a small bowl and stir to combine
  20. Transfer the cream mixture into the jug with the reserved broth and stir to combine
  21. Then slowly add the mixture into the appliance bowl while the machine is running
  22. Cook until the soup has thickened - 5 minutes, 105ºC, speed Stir 1
  23. Serve
