These Keto coconut macaroons are simple, chewy bites made with desiccated coconut, egg whites and a touch of vanilla. They can be dipped or drizzled with melted chocolate for a sweet finish. Step preview

  1. Preheat the oven - 160ºC
  2. Like a baking tray with parchment paper
  3. Fit the Whisk Tool
  4. Add the ingredients into the appliance bowl
  5. Whisk until soft peaks have formed - 1 minute, speed Max
  6. Then add the sweetener gradually while the machine is running
  7. Whisk until stiff peaks have formed - 2 minutes, speed Max
  8. Then the next ingredients
  9. Whisk until combined - 1 minute, speed 1
  10. Take a heaped tablespoon of mixture and shape into a ball
  11. Place on the baking tray and flatten slightly into an oval shape
  12. Repeat the same process with the remaining mixture
  13. Bake until lightly browned on top - 15-20 minutes, 160ºC
  14. Remove from the oven and let cool completely
  15. Once cool, use a teaspoon or piping bag to drizzle melted chocolate over each macaroon
  16. Chill in the fridge until set - 20 minutes
  17. Serve
